Located on the 5rd floor of the Roppongi Hills West Walk, Sumashidokoro Oryori Fukuboku serves signature clear-broth noodles and duck-broth rice for lunch, as well as seasonal kappo courses paired with fine ceramics in a calm, modern setting.
01 / ABOUT THE PLACE
The broth in the bowl is pristine and translucent, inviting you to take an initial sip before adding any toppings at all. Situated on the 5rd floor of the Roppongi Hills West Walk, Sumashidokoro Oryori Fukuboku is dedicated to refined dashi, spotlighting clear soups reminiscent of traditional Japanese sumashi-jiru alongside seasonal kappo dining. Its signature sumashi-men pairs a delicately savory soup with thin noodles, creating an understated base that transforms with the gradual addition of scallions, nori, or a dash of sesame oil from the counter. At lunch, sets paired with duck-broth rice infused with dashi provide a light yet deeply satisfying meal.
Beyond the quick noodle lunches, the restaurant's multi-course menus offer an immersive exploration of seasonal Japanese ingredients. Options include the Shun Course and Iki Course, highlighting seasonal produce shipped directly from across the country, as well as the flagship Fukuboku Course, served on ceramics crafted by ceramicists Kai Tsujimura and Shiro Tsujimura. To accompany the nuanced dishes, the beverage list features Champagne, wines, aged 5 vintage Kirishima tea, and premier sake, including limited-edition Kokuryu junmai daiginjo labels like Ishidaya and Hachijuhachigo.
Despite its setting in the heart of Roppongi, the atmosphere remains quiet and composed, equally suited to an unhurried solo lunch over dashi noodles or a reserved evening of seasonal dining.
